Pumpkin-Potato Gnocchis

Ingredients
  • Tomato Sauce:
  • 1 can of organic chopped tomatoes, unsalted
  • 1 glove of garlic
  • 1 onion
  • 1-2 tsp of fresh thyme
  • 2 tsp of coconut sugar
  • 1 tbsp of apple vinegar
  • salt and pepper
  • Gnocchi
  • 500 g Hokkaido pumpkin
  • 350 g of potatoes
  • 80 g chickpea flour
  • 50 g potato flour
  • salt, nutmeg
Instructions
  1. Sauce:
  2. For the sauce chop garlic and onion and fry in a bit of water or coconut oil for 2-3 minutes
  3. Add the other ingredients and cook gently for 8-10 minutes
  4. Gnocchis:
  5. For the Gnocchis cut the pumpkin and bake or cook until done
  6. Cook the potatoes until tender and peel them
  7. Mash them with a fork or Masher
  8. Mash the pumpkin
  9. Mix all your ingredients in a bowl and knead the dough briefly
  10. Bring a large pot of salted water to boil
  11. Cut the dough into equal pieces and place one piece on a lightly floured work surface. Roll piece into a long rope. Slice the rope into pieces 2cm wide
  12. Press flatter with a fork until slight indentations are formed
