Fancy Carrot Pasta - Must Try

Ingredients
  • 2 medium carrots
  • 2 cloves garlic
  • 1 small onion
  • 120 ml vegetable stock
  • 200 g silken tofu
  • 1 pinch of nutmeg
  • 1 tbsp nut butter
  • ½ tsp thyme
  • 2 tbsp yeast flakes
  • 1 tbsp mustard
  • Salt and pepper to taste
Instructions
  1. Cook the pasta for 1 minute less than the instructions on the packet.
  2. To make the sauce, finely chop the onion, garlic and carrots. Sauté in a little oil. Add the vegetable stock and cook until done.
  3. Blend the silken tofu with the other sauce ingredients until creamy. Season to taste with salt and pepper. Pour the sauce into a pan and simmer for 1 minute with the pasta and 1 tbsp of pasta water. Serve hot with herbs and yeast flakes.
