- Dough:
- 180 g spelt flour (type 630)
- 70 g ground almonds
- 70 g date sugar (or 60 g pureed dates)
- 25 g cocoa
- 1.5 tsp cream of tartar baking powder
- 1.5 tsp baking soda
- 1 pinch of salt
- 280 ml sparkling water
- 50 ml vegetable oil
- 1.5 tsp apple cider vinegar
- Cream:
- 400 g vegan quark
- 150 ml vegan whipping cream (+ cream stiffener/ guar gum if necessary)
- 1 tsp guar gum or ground psyllium husks or 1 tbsp chia seeds*
- 4 dark chocolate ribs
- 4-5 bananas
- Preheat the oven to 160 °C fan oven and grease a 24 cm springform pan.
- Mix the dry ingredients (spelt flour, ground almonds, date sugar, cocoa, cream of tartar baking powder, baking soda and salt).
- Add the sparkling water, vegetable oil and apple cider vinegar and mix briefly.
- Pour the batter into the springform pan and bake for approx. 30 minutes (test with a skewer). Leave the cake to cool completely.
- Prepare the cream:
- Whip the vegan whipping cream (with cream stiffener or guar gum if required).
- Mash two bananas and mix with vegan quark and chia seeds (or guar gum/psyllium husks).
- Fold in the whipped cream and grated dark chocolate.
- Hollow out the cake and fill:
- Scoop out the cake with a spoon, leaving the edge (1 cm) and base (2 cm).
- Cut a banana in half lengthways and place in the cake cavity with other banana pieces.
- Spread the cream over the bananas in a dome shape and sprinkle with cake crumbs.
- Chill the cake so that the cream sets and the flavors combine.
- Note: In hot weather, use guar gum for the cream and chia seeds for the quark.
