Last Minute Chestnut Christmas Cookies

  • 300 g of pre-cooked chestnuts (Whole Organic Chestnuts, Roasted and Peeled)
  • 100 g of corn starch (or any other gluten-free flour)
  • 80 ml of coconut oil
  • 120 ml of maple syrup
  • 1 pinch of salt
  • Dash of vanilla
  1. Preheat oven to 170° C.
  2. With a fork, mash the chestnuts. Add other ingredients to form a dough.
  3. Place dough on a parchment layered baking tray and roll out the dough evenly.
  4. Bake for about 15 minutes or until slightly golden brown.
  5. Remove from the oven and slice into preferred quarter size while still warm.
