Chocolate Bean Peanut Muffins | Gluten-free

Ingredients
  • 1 banana
  • 300 ml oat milk
  • 200 ml sparkling water
  • 100 g white bean flour
  • 20 dates, pitted
  • 80 g peanut butter
  • 2 tbsp chocolate powder
  • 1 tbsp cocoa nibs
  • 2 tsp baking powder
Instructions
  1. Preheat the oven to 180°C.
  2. Mix all the ingredients except the baking powder and cacao nibs until well-blended. Add the baking powder and cacao nibs and stir once again at the lowest speed. Divide the mixture between 12 muffin silicone liners. Bake for 20-25 minutes. Allow to cool completely before enjoying.
Notes
If you have a good blender, you can make your own flour by grinding in a high-powered blender the dried beans. Just turn the machine on and increase the speed to maximum for consistently fine ground beans!
