Ingredients
  • Quick Beluga Lentil Salad - best for taking away
  • 500 g Beluga lentils
  • 4 dates
  • 1 leek
  • 300 g champions, brown
  • 1 bell pepper
  • ¼ cucumber
  • 15 g coriander
  • 1 tbsp vinegar
  • smoked salt
  • Black pepper
  • Dressing:
  • 100 ml vegetable broth
  • 100 ml vinegar
  • 2 tbsp coconut amino (optional Tamari)
  • 3 teaspoons mustard
  • 4 tsp sweet balsamic vinegar
  • 2 teaspoons tahini/almond butter
  • 3 sweet dates (optional, 1-2 EL date syrup)
Instructions
  1. Cut the dates into small pieces. Cook lentils and dates until tender and let cool down.
  2. Halve leeks, wash and cut into rings.
  3. Eighth the champions, cut the peppers into strips, dice the cucumber.
  4. Steam the leek briefly in vinegar. After about 5 minutes add the peppers and champions.
  5. Flavour with smoked salt or normal salt and pepper.
  6. For the dressing, put all ingredients in a blender and puree until creamy.
  7. Mix lentils, vegetables and cucumbers in a salad bowl. Add fresh coriander and dressing. Flavour with salt and pepper and sesame seeds.
