Healthy vegan cinnamon stars

Ingredients
  • 160 g coconut sugar (blended to powder)
  • 200 g almond flour
  • 50 g tigernut flour (can be replaced by ground almonds)
  • 1 tbsp lemon juice
  • 2 tbsp cinnamon
  • 8-9 tbsp water
  • pinch of salt
  • pinch of clove
  • peel of 1 small organic orange
  • Glaze:
  • ½ cup coconut sugar
  • 1 tsp tapioca flour
  • orange juice
Instructions
  1. blend the coconut sugar until you get powdered sugar.
  2. transfer sugar into a bowl and combine with the almond and tigernut flour.
  3. add the cinnamon, clove, lemon juice, salt, orange peel, and water.
  4. knead until you get a sticky dough.
  5. roll out the dough and cut out stars.
  6. bake the stars at 180C for about 5-7 minutes.
  7. let cool down.
  8. Glaze:
  9. for the glaze, blend coconut sugar and tapioca to get powder sugar.
  10. Once done, whisk together powdered sugar and orange juice (optional: vanilla) until you get a thick consistency.
  11. using a spoon, coat one side of the stars with the glaze and let dry.
