Read Kidney Bean Salad - for more balance

Ingredients
  • 1 glass Kidney beans, organic
  • ½ apple
  • ½ grapefruit or blood orange
  • 1 beetroot
  • 1 handful parsley
  • ½ handful pumpkin seeds
  • ½ handful of peanuts
  • Dressing:
  • 1,5 tbsp Tamari
  • juice of 1 lemon
  • 1,5 tbsp sweet balsamic vinegar
  • 1 tbsp Aquafaba
  • Juice of half grapefruit/ blood orange
Instructions
  1. Wash and strain the kidney beans and keep some of the kidney bean water for the dressing (Aquafaba).
  2. Cut the apple and parsley into sticks, dice the grapefruit and mix the ingredients with the kidney beans in a bowl.
  3. Whisk dressing until well combined and pour over the salad.
  4. Serve the salad with the parsley, peanuts and pumpkin seeds.
