Read Kidney Bean Salad - for more balance |

- 1 glass Kidney beans, organic
- ½ apple
- ½ grapefruit or blood orange
- 1 beetroot
- 1 handful parsley
- ½ handful pumpkin seeds
- ½ handful of peanuts
- Dressing:
- 1,5 tbsp Tamari
- juice of 1 lemon
- 1,5 tbsp sweet balsamic vinegar
- 1 tbsp Aquafaba
- Juice of half grapefruit/ blood orange
- Wash and strain the kidney beans and keep some of the kidney bean water for the dressing (Aquafaba).
- Cut the apple and parsley into sticks, dice the grapefruit and mix the ingredients with the kidney beans in a bowl.
- Whisk dressing until well combined and pour over the salad.
- Serve the salad with the parsley, peanuts and pumpkin seeds.
