- 50 g oat flakes
- 80 g cauliflower rice, frozen or cauliflower, fresh
- 1 handful blueberries, frozen
- 1 tbsp poppy seed
- ½ organic lemon zest
- 2 tbsp yoghurt
- 120 ml coconut rice milk
- Put the cauliflower, either fresh or deep-frozen, into the blender and shred into small cauliflower rice. If it has to go really fast, you can also simply use ready-made cauliflower rice (frozen).
- Mix oat flakes, cauliflower rice and blueberries with the yoghurt.
- Add the poppy seeds and the zest of half an organic lemon.
- Add the coconut-rice-milk and stir.
- Put the mixture into the fridge for at least an hour or overnight.
