Poppy Cauliflower Lemon Oats

Ingredients
  • 50 g oat flakes
  • 80 g cauliflower rice, frozen or cauliflower, fresh
  • 1 handful blueberries, frozen
  • 1 tbsp poppy seed
  • ½ organic lemon zest
  • 2 tbsp yoghurt
  • 120 ml coconut rice milk
Instructions
  1. Put the cauliflower, either fresh or deep-frozen, into the blender and shred into small cauliflower rice. If it has to go really fast, you can also simply use ready-made cauliflower rice (frozen).
  2. Mix oat flakes, cauliflower rice and blueberries with the yoghurt.
  3. Add the poppy seeds and the zest of half an organic lemon.
  4. Add the coconut-rice-milk and stir.
  5. Put the mixture into the fridge for at least an hour or overnight.
