Crispy Pea Zucchini Fritters - vegan, healthy and oil-free

These are the crispiest and healthiest pea zucchini fritters. The recipe is prepared in a few minutes and tastes delicious. It comes completely without oil and eggs. We served the pea zucchini fritters with a delicious herb yogurt dip.
  • 150 g zucchini (1 zucchini)
  • 240 g peas
  • 1 tsp coriander or 1 tsp coriander powder
  • ½ tsp cumin
  • 1 tsp salt
  • ½ tsp pepper
  • 30 g wholemeal flour/buckwheat flour
  1. First, grate the zucchini and squeeze out the excess liquid.
  2. Then salt the grated zucchini a little to remove the moisture.
  3. Mash the peas and add them to the bowl with the zucchini.
  4. Add the cilantro (or coriander powder), cumin, salt, and pepper. Mix all the ingredients well.
  5. Now add the whole wheat flour or buckwheat flour and stir it in thoroughly until you get a uniform mixture.
  6. Then form about 6 fritters from the mixture and place them on a baking tray lined with baking paper or in the AirFryer basket.
  7. Finally, bake the fritters in the Air Fryer at 180 °C for about 15 minutes or until golden brown and crispy. It takes a little longer in the oven.
  8. You can optionally spray them with oil spray for extra crispiness.
  9. Once the fritters are done, serve them along with the herbed yogurt dip.

While the fritters are baking, prepare the herb yogurt dip. To make it, mix herbs of your choice, such as parsley, chives, or dill, with a vegetable yogurt, vegan Skyr, or quark alternative.
