Ingredients

  • 300 g almonds (or 150 g almonds and 150 g hazelnuts)
  • 200 g date paste At the top of the article, I explain how you can easily make it yourself.
  • 3 tbsp cinnamon
  • 1 pinch salt
  • 1 tbsp water or lemon juice (only if the dough is too dry)

Instructions

  • Finely grind the almonds and optional hazelnuts in a food processor.
  • Add the date paste, cinnamon, and a pinch of salt, and knead everything together until you have a malleable dough. If the dough is too dry, add a little water or lemon juice.
  • Chill the dough for about 20 minutes, then roll it out between two sheets of baking paper or on a lightly floured surface and cut out stars.
  • Preheat the oven to 120°C (fan oven) and bake the stars for about 4-5 minutes. If you prefer them softer, simply leave them unbaked or dry them with the oven door slightly open.

Notes

Traditionally, only almonds are used, but if you like hazelnuts, you are welcome to add them to the mixture.
