Linzer Schnitten - natural, healthy and hormone-friendly

This version of the traditional Linzer Schnitten is more nutritious, naturally sweetened and contains no grain flour whatsoever. It is also vegan, blood sugar-friendly, anti-inflammatory and hormone-friendly!

Ingredients
  

Ingredients for the dough

  • 150 g ground almonds or whole almonds, freshly ground
  • 50 g almond flour
  • 150 g ground hazelnuts or whole hazelnuts, freshly ground
  • 100 g date sugar or erythritol
  • Zest and juice of one large organic orange
  • 1 pinch of salt
  • 4 tsp cinnamon
  • optional 1 tsp aniseed

For the filling

  • Approx. 250 g sugar-free strawberry fruit spread

Instructions
 

  • Preheat the oven to 180 degrees Celsius (upper and lower heat).
  • Mix all the ingredients for the dough in a bowl. The dough should be slightly moist, easy to shape and not crumbly.
  • Roll out about three quarters of the dough on a piece of baking paper into a rectangle, approx. 1.5 cm thick. Spread the fruit spread evenly over the base.
  • Roll out the remaining dough and cut into strips about 1 cm wide. Place these diagonally or as shown in the video over the fruit filling.
  • If the dough crumbles or is difficult to bind, mix a linseed egg (mix ground linseed with water, leave to soak for 10 minutes) and work it in immediately. If the dough is stable without it, you don't need to do this - it worked very well for me without it.
  • Bake the Linzer slices for about 20-25 minutes until the surface is golden brown. Allow to cool completely and then cut into pieces.

Notes

Shelf life
This biscuit is a long-life product and will keep for at least two weeks if stored in an airtight container. Over time, it becomes even more aromatic as the filling is absorbed into the dough and it becomes juicier. Thanks to their stable structure, Linzer slices are ideal for giving as gifts or sending by post, even in smaller sizes. Of course, you could also make a cake out of them. However, I prefer the small pieces!
