Vegan sausages
A delicious, healthy vegan sausage made from smoked tofu and rice paper. It is gluten-free, low in fat, and tastes like a meat sausage. Juicy on the inside and slightly crispy on the outside. Perfect for lunch, dinner, or even to take with you on the go.

- 400 g smoked tofu
- 2 onions finely diced
- 2 garlic cloves finely chopped
- 2 tbsp mustard
- 1 tbsp tomato paste
- 2 tbsp tamari sauce or soy sauce
- 2 tbsp yeast flakes
- 2 tsp smoky salt
- 1 tsp thyme or marjoram
- 2-4 tbsp chickpea flour (or other flour)
- 10 rice paper sheets
- salt and pepper to taste
Sauté the onions and garlic in a pan until translucent.
Finely crumble the smoked tofu with your hands until it has an even, slightly grainy texture.
Add the sautéed onions and garlic to the tofu and fold in the mustard, tomato paste, tamari sauce/soy sauce, yeast flakes, smoked salt, and herbs.
Knead everything thoroughly. The mixture should be moldable; if it seems too soft, add a little chickpea flour (or other flour).
Season with salt and pepper.
For the wrapper, hold a rice paper sheet under running water for about three seconds, place it on a board, and place a portion of the tofu mixture in the center. Press the mixture down lightly. Then roll the rice paper up tightly and fold in the ends.
Continue until all the sausages are formed.
Then fry the rolls in a pan with a little oil until browned all over.
The combination of rice paper wrapper and spicy tofu filling creates a juicy, firm interior and a tender, slightly crispy exterior.
