Guys, summer is just around the corner. You can’t believe how excited I am. Anyone who knows me knows how much the sun makes me glow and that my energy levels are unbearable when the sun is out. Are you looking forward to summer as much as I am?
Protein-rich pea spread – the perfect summer snack
Ok, enough raving about summer. We’re here for something else. And that’s this super protein-rich pea spread. I’m telling you, it’s better than hummus – a real summer must-try.
I can think of so many occasions when this puree will go down so well. You can make it for yourself at home and leave it in the fridge for a few days. That way you’ll always have something to snack on. It tastes great on bread, rice cakes or crackers. But it’s also an unbeatable combination with vegetables.
I also think the spread is perfect for barbecues or going to the lake or hiking with your friend.
All you need are five ingredients, some of which you probably always have at home.
To the recipe:

- Serving size: 1
- Calories: 348
- Fat: 3
- Carbohydrates: 55
- Protein: 22
- - 450g peas (frozen)
- - 200 ml vegetable broth
- - Juice of ½ lemon
- - 1 spring onion
- - 1 handful of mint
- - Salt and pepper
- Put all the ingredients in your blender and blend well. Finally, season to taste and add a little more lemon or salt if necessary. The protein-rich summer pea puree is ready.
