Quick 5-Ingredient Apple Cake
Ingredients
- 500 g apples
- 4 eggs
- 250 g skyr (e.g., made from soy)
- 80 g ground almonds or hazelnuts
- 60 g erythritol
Optional
- Pinch of salt
- Cinnamon or vanilla
- A little lemon juice for the apples
Instructions
- Preheat the oven to 180 degrees Celsius (top and bottom heat).
- Thinly slice the apples and, if desired, toss them with a little lemon juice to prevent them from browning.
- In a bowl, whisk the eggs together with the skyr and erythritol until smooth and well combined.
- Then stir in the ground almonds. Optionally, add cinnamon, vanilla, and a pinch of salt.
- Fold the prepared apples into the batter and mix everything evenly.
- Grease a small baking pan or line it with parchment paper and pour the batter into it.
- Bake the cake at 180 degrees for about 40 to 50 minutes, until it is golden brown. Baking time may vary slightly depending on the oven.
- After baking, let the apple cake cool completely so it develops its final texture and is easy to slice.
