Vegan Easter Inspiration | Simple and healthy recipes
Vegan Easter Inspiration: Easter is once again just around the corner. I love to invite my family or friends and create a wonderful day for them with some simple and healthy recipes. Of course, everything always has to be vegan, simple and healthy for me at Easter too.
You love that a lot too? Then I have an Easter inspiration in vegan with which guaranteed nothing goes wrong 😉
Here comes the Easter inspiration in vegan:
Easter Carrot Cake
Absolutely recommended is the Easter carrot cake. With the healthy Easter carrot cake you inspire your friends and family for sure! The cake actually goes super fast, leaving more time for great conversation or time with loved ones.
Russian Pluck Cake
Another cake that goes super fast and maybe you even have all the ingredients for it already at home. As already revealed, you don’t need that many ingredients for the vegan Russian pluck cake, and you might even have all of them already at home. In fact, the preparation is super fast – I usually need only 10-15 minutes. The rest is done in the oven.
Finally, comes the hardest part. You have to wait for the vegan chocolate cheesecake with sprinkles to cool…and by then it always smells so delicious.
There was a time when all I ate was sushi and rolled everything in nori sheets. Eventually those ran out, then I thought I’d just use zucchini. Here goes. These zucchini rolls are a hit on any buffet, like Easter, as an appetizer or healthy snack. Because of the beans, they also bring a good portion of protein. The tahini ensures that the amino acid profile is complete and we have a complete protein here. So dig in, it’s worth it :).
If it may be a little heartier, I would recommend you to prepare a few burger patties. These can then pimp each guest individually and according to his taste. These lentil patties go super fast and are also healthy. A real hit! From experience I would say: better prepare a few more, otherwise your guests look quickly in emptiness 😉
For me, pancakes are a must at every brunch. They taste good to everyone and are super quick to make. For this recipe, you only need to throw a few ingredients in the blender and you have a ready dough! You can then refine the baking as desired with fruit and other sweets. I opted for berries this time.
You can find more great ideas for an (Easter) brunch in my new book “Ein Bauch voll Glück” (“A Belly Full of Happiness”), where we have, for example, zucchini brownies, vegan French rolls or healthy wraps, which you can serve perfectly for a brunch. Take a look!
Of course, all Easter inspirations are vegan, healthy, and delicious 😉
Happy Easter my loves!!!🐰🐣
