To the recipe “The easiest and healthiest pumpkin mousse”
- Serves: 4-6
- Calories: 151

- 400 g silken tofu
- 400 g pumpkin (e.g. Hokkaido or butternut)
- 7-9 Medjool dates (pitted)
- 50 g cashews
- optional: 100g or more for cashew cream
- Spices such as: 2 tsp cinnamon 1 tsp vanilla powder, 1 pinch of salt
- Cut the pumpkin into small pieces. Cover the pumpkin pieces with water in a saucepan and cook until soft (approx. 10-15 minutes). Optionally cook in the microwave until soft. Then drain and leave to cool. Soak the cashews in hot water for at least 20-30 minutes. Then drain, blend, and set aside. Puree ⅓ of the cashew cream together with the other ingredients in a blender. The silken tofu makes the mousse fluffy. Pour the pumpkin mousse into small bowls and leave to rest in the fridge for at least 1-2 hours. Before serving, decorate as desired with (cashew cream), cacao nibs, berries and co.
