Do you enjoy healthy Christmas recipes as much as I do?
I love the Christmas season and look forward to the first cookies every year. With this cinnamon star recipe, I would like to get you in the mood. It’s simple, quick, and no-fuss, as it only has three ingredients that you probably already have at home. You can either leave them raw, like energy bites, or bake them if you want them crispier. Cinnamon stars also make a great gift for friends and family.

What ingredients do you need for vegan cinnamon stars?
- Almonds (or replace half with hazelnuts if you like the taste)
- Date paste (make your own using my recipe below or buy it from dm or a health food store)
- Cinnamon (it’s best to use Ceylon cinnamon, as it contains less coumarin and is therefore healthier than cassia).
- Pinch of salt
- Water or lemon juice (only if the dough becomes too dry)
Quick date paste recipe from my cookbook “Ein Bauch voll Glück” (A Belly Full of Happiness)*:
For approx. 550 g of date paste, simply place 2 cups of pitted Medjool dates and 1/2 cup of water in a blender and purée. If your blender isn’t very powerful, soak the dates briefly beforehand or blend them with hot water.
Did you know that cinnamon is a real super spice?
Cinnamon aids digestion and has anti-inflammatory properties. It can also slightly lower blood sugar levels. The spice is also said to help with digestive problems such as flatulence and bloating. Cinnamon also stimulates bowel activity and can relieve cramp-like symptoms. Furthermore, cinnamon has antibacterial properties, promotes blood circulation, and strengthens the immune system. That’s exactly why cinnamon is ideal for the cold season.
How does the recipe work?
Basically, you just have to mix all the ingredients in a blender to form a dough. Chill the dough for about 20 minutes, roll it out, cut out stars, and bake briefly.

Healthy cinnamon stars - 3 ingredients, vegan, hormone-friendly
Ingredients
- 300 g almonds (or 150 g almonds and 150 g hazelnuts)
- 200 g date paste At the top of the article, I explain how you can easily make it yourself.
- 3 tbsp cinnamon
- 1 pinch salt
- 1 tbsp water or lemon juice (only if the dough is too dry)
Instructions
- Finely grind the almonds and optional hazelnuts in a food processor.
- Add the date paste, cinnamon, and a pinch of salt, and knead everything together until you have a malleable dough. If the dough is too dry, add a little water or lemon juice.
- Chill the dough for about 20 minutes, then roll it out between two sheets of baking paper or on a lightly floured surface and cut out stars.
- Preheat the oven to 120°C (fan oven) and bake the stars for about 4-5 minutes. If you prefer them softer, simply leave them unbaked or dry them with the oven door slightly open.
