Deciding what to have for a healthy rich in protein snack, for breakfast or as a snack to go can be difficult. Especially when there is almost no time to spend in the kitchen.
These muffins came to be because I needed something that was both quick to make, handy and high in protein.
This blender recipe is one of 20 blender recipes I created for a great project with KitchenAid. It’s one of 20 recipes I created for a Blender Starter Guide coming soon. All the recipes are super easy, healthy and quick to make.

- 1 banana
- 300 ml oat milk
- 200 ml sparkling water
- 100 g white bean flour
- 20 dates, pitted
- 80 g peanut butter
- 2 tbsp chocolate powder
- 1 tbsp cocoa nibs
- 2 tsp baking powder
- Preheat the oven to 180°C.
- Mix all the ingredients except the baking powder and cacao nibs until well-blended. Add the baking powder and cacao nibs and stir once again at the lowest speed. Divide the mixture between 12 muffin silicone liners. Bake for 20-25 minutes. Allow to cool completely before enjoying.
