Who does not love fresh little pancakes that make every morning perfect? For some people they are pancakes, for others they are pancakes and for me, they are little happiness makers. As soon as this delicious breakfast is served, sorrow and worries are quickly forgotten – especially if they are still decorated with peanut purée and banana 🙂
PROTEIN PANCAKES WITHOUT BANANA?
Obviously I love bananas, but certainly, not everyone does. A few of you have specifically asked me for recipes without the banana. And I have to say, I feel for you when bananas get on your nerves in vegan recipes. And when I wasn’t vegan, I found banana recipes really uncool and couldn’t stand the taste. But after more than seven years of vegan life, my taste has changed dramatically. So let’s see what’s gonna happen 🙂 Maybe you can’t stand bananas either? By the way, all my pancake recipes are banana-free so far, like these pancakes for example. But I like my sweet potato pancakes from my book best.
FLUFFY PROTEIN PANCAKES – HERE WE GO…
But if you take bananas out of the pancake equation, the recipe definitely doesn’t have to lose its looseness and lightness :). The protein powder spends real wonders in this recipe. And of course, I use Vivo here as always, how could it have been any different. For this recipe, I prefer to use the vanilla flavor, because this variety gives a pleasant sweetness through the addition of Stevia – but of course, it works without. If you don’t like this taste, you can try my other recipes. For example, I can also recommend apple sauce as a substitute. This works as an oil substitute, as a banana substitute AND gives the necessary fluffiness. I made these pancakes with lovely Laura!

- Carbohydrates: 50,3

- 100 gr oat flour
- 100 gr teff flour (@govindanatur)
- 1 scoop of protein powder (I like @vivolife vanilla flavor)*
- 1 tsp flax meal
- 1 tbs apple cider vinegar
- 300 ml of plant milk
- pinch of natron
- Combine in a bowl and whisk until smooth.
- Fry in some coconut oil or a non-stick pan. Serve with peanut butter, banana, or whatever comes into your mind, aka stars in Laura’s case 🙂
