Sushi Bowls are a simplified sushi version. Also, it’s a great opportunity to have kind of sushi, with a non-sushi eater. For example, my boyfriend doesn’t like sushi but just because of the Nori Sheets. And with this bowl, we found our solution for eating “sushi” together :).
As always, this recipe is super easy to make. The longest part is to wait until your rice is done. But you can prep and snack your veggies during boiling the rice.
Healthy Notes:
Seaweed – Great source of vitamins and minerals like iodine to help maintain healthy thyroid function. It also helps to boost your intake of calcium and contains iron and vitamin k.
Avocado – Full of healthy fats which are for example important for your internal organs.
Red rice – this whole grain rice has a nutty flavour and is rich in fiber. It’s similar to brown rice
Peas and edamame – both veggies but especially are a great source of plant proteins

I love sushi bowls and burrito bowls! You can put all kinds of delicious ingredients on top of a delicious whole grain rice base! I like adding seaweed and sesame seeds on mine!
