Actually, this is an old recipe which I uploaded on mealz.com a while ago. But seeing the first pumpkin at the market brought the pumpkin gnocchis back to my mind. I absolutely love gnocchis and especially with pumpkin. Hope you are going to love them as much as I do :).
Pumpkin-Potato Gnocchis

Ingredients
- Tomato Sauce:
- 1 can of organic chopped tomatoes, unsalted
- 1 glove of garlic
- 1 onion
- 1-2 tsp of fresh thyme
- 2 tsp of coconut sugar
- 1 tbsp of apple vinegar
- salt and pepper
- Gnocchi
- 500 g Hokkaido pumpkin
- 350 g of potatoes
- 80 g chickpea flour
- 50 g potato flour
- salt, nutmeg
Instructions
- Sauce:
- For the sauce chop garlic and onion and fry in a bit of water or coconut oil for 2-3 minutes
- Add the other ingredients and cook gently for 8-10 minutes
- Gnocchis:
- For the Gnocchis cut the pumpkin and bake or cook until done
- Cook the potatoes until tender and peel them
- Mash them with a fork or Masher
- Mash the pumpkin
- Mix all your ingredients in a bowl and knead the dough briefly
- Bring a large pot of salted water to boil
- Cut the dough into equal pieces and place one piece on a lightly floured work surface. Roll piece into a long rope. Slice the rope into pieces 2cm wide
- Press flatter with a fork until slight indentations are formed
