Make your own meat-free, gluten-free, low-fat, and purely plant-based sausages
Making vegan bratwurst yourself is easier than many people think. This recipe consists of natural ingredients, is gluten-free, and does not contain any artificial binders. The sausages are tender and aromatic on the inside and slightly crispy on the outside. That’s exactly how a really good plant-based bratwurst should taste.
I was surprised myself at how close this recipe comes to the taste of classic bratwursts. My friend Justine and I are completely convinced. Give it a try. If you like bratwursts, you’ll love this version.

What goes well with vegan bratwurst?
It tastes great with green salads, potato salad, potato wedges, potatoes with sauerkraut, or roasted vegetables.
Why is this recipe so good?
Vegan and gluten-free
The base is smoked tofu and rice paper. You don’t need wheat gluten, so no seitan.
Juicy on the inside and slightly crispy on the outside
The combination of tofu mixture and rice paper works perfectly, as the coating becomes slightly crispy when fried.
Easy to make
You don’t need any special equipment to prepare it, not even a blender.
Less fat and lots of protein
Smoked tofu adds flavor and provides your body with high-quality plant-based protein.

Vegan sausages
Ingredients
- 400 g smoked tofu
- 2 onions finely diced
- 2 garlic cloves finely chopped
- 2 tbsp mustard
- 1 tbsp tomato paste
- 2 tbsp tamari sauce or soy sauce
- 2 tbsp yeast flakes
- 2 tsp smoky salt
- 1 tsp thyme or marjoram
- 2-4 tbsp chickpea flour (or other flour)
- 10 rice paper sheets
- salt and pepper to taste
Instructions
- Sauté the onions and garlic in a pan until translucent.
- Finely crumble the smoked tofu with your hands until it has an even, slightly grainy texture.
- Add the sautéed onions and garlic to the tofu and fold in the mustard, tomato paste, tamari sauce/soy sauce, yeast flakes, smoked salt, and herbs.
- Knead everything thoroughly. The mixture should be moldable; if it seems too soft, add a little chickpea flour (or other flour).
- Season with salt and pepper.
- For the wrapper, hold a rice paper sheet under running water for about three seconds, place it on a board, and place a portion of the tofu mixture in the center. Press the mixture down lightly. Then roll the rice paper up tightly and fold in the ends.
- Continue until all the sausages are formed.
- Then fry the rolls in a pan with a little oil until browned all over.
- The combination of rice paper wrapper and spicy tofu filling creates a juicy, firm interior and a tender, slightly crispy exterior.
- Best served fresh!
Notes
These vegan sausages show how easy and delicious plant-based alternatives can be. They are healthy, gluten-free, low in fat, and contain no additives. The taste is impressive, and the consistency makes them a great sausage for anyone who wants to eat less meat or try something new.
