Would you like some healthy Linzer slices made from natural ingredients?
If you’ve known me for a while, you probably know that I love Christmas. I love spending it with my family. And because cooking and baking are among my passions, I’ve created another Christmas treat for you. Linzer Schnitten are super easy to make and will turn out well even if you don’t have much baking experience. The nice thing is that they make wonderful gifts. If you want to give someone a little treat, they are perfect.
By the way, they become even more aromatic if you don’t eat them immediately after baking. The filling then soaks into the dough slightly and makes everything juicier. If you don’t have the patience for that, you can of course enjoy them straight away. They are always delicious.
Linzer slices – natural, aromatic, without classic sugar
This version of the traditional Linzer Schnitten is more nutritious, naturally sweetened and contains no grain flour whatsoever. It is also vegan, blood sugar-friendly, anti-inflammatory and hormone-friendly! The base consists of freshly ground nuts, which gives the dough a particularly aromatic profile and a finer texture. Alternatively, you can use pre-ground nuts. However, freshly ground nuts add more moisture and flavour.
Why are these Linzer slices hormone-friendly?
Because they don’t overwhelm your body. The basic combination of almonds and hazelnuts ensures that your blood sugar remains stable. You get energy, but without those rapid highs and lows that can push stress hormones and exacerbate PMS.
Instead of industrial sugar, I use date sugar or erythritol. This keeps your blood sugar more stable and your body working in a more relaxed way. Your insulin and cortisol levels benefit from this in particular. You can also make the filling yourself. For example, you could use the fake berry jam recipe from my cookbook “Ein Bauch voll Glück* (A Belly Full of Happiness)” or this jam from Vilgain*. Furthermore, the nuts provide healthy fats and natural nutrients that your hormonal system needs for more balance. If you often experience cravings, fatigue or mood swings, this can help relieve them.
The recipe is gluten-free and contains no processed ingredients. This results in less silent inflammation in the body, which is generally good for your cycle.
The orange, cinnamon and aniseed spices add warmth, fragrance and antioxidant properties. They aid digestion and help the liver break down excess hormones more effectively. This makes you feel lighter.
In short, it’s a pastry that nourishes rather than stresses. Gentle on your blood sugar, rich in good fats and full of natural ingredients. That’s exactly why it fits so well into a hormone-friendly diet. 🙂

Linzer Schnitten - natural, healthy and hormone-friendly
Ingredients
Ingredients for the dough
- 150 g ground almonds or whole almonds, freshly ground
- 50 g almond flour
- 150 g ground hazelnuts or whole hazelnuts, freshly ground
- 100 g date sugar or erythritol
- Zest and juice of one large organic orange
- 1 pinch of salt
- 4 tsp cinnamon
- optional 1 tsp aniseed
For the filling
- Approx. 250 g sugar-free strawberry fruit spread
Instructions
- Preheat the oven to 180 degrees Celsius (upper and lower heat).
- Mix all the ingredients for the dough in a bowl. The dough should be slightly moist, easy to shape and not crumbly.
- Roll out about three quarters of the dough on a piece of baking paper into a rectangle, approx. 1.5 cm thick. Spread the fruit spread evenly over the base.
- Roll out the remaining dough and cut into strips about 1 cm wide. Place these diagonally or as shown in the video over the fruit filling.
- If the dough crumbles or is difficult to bind, mix a linseed egg (mix ground linseed with water, leave to soak for 10 minutes) and work it in immediately. If the dough is stable without it, you don't need to do this - it worked very well for me without it.
- Bake the Linzer slices for about 20-25 minutes until the surface is golden brown. Allow to cool completely and then cut into pieces.
Notes
This biscuit is a long-life product and will keep for at least two weeks if stored in an airtight container. Over time, it becomes even more aromatic as the filling is absorbed into the dough and it becomes juicier. Thanks to their stable structure, Linzer slices are ideal for giving as gifts or sending by post, even in smaller sizes. Of course, you could also make a cake out of them. However, I prefer the small pieces!
