Hi plantbabe, here is a list of all my vegan cooking hacks. Whether you are already an expert when it comes to vegan recipes or you’re new to vegan cooking, my vegan hacks got you covered.
7 Vegan Egg Substitutes for Baking:
- Mashed Banana:
1/2 mashed banana is a great replacement for an egg in bakings. It also adds a fruity flavor to your recipe. If you want a flavorless alternative which works the same way as bananas do, go for silken tofu. - Apple Sauce:
1/4 cup of apple sauce works more or less like a banana. It just adds another flavor and is great for anyone who’s not so much into banana flavor everywhere and always. If you are feeling experimental, you can try substituting other types of pureed fruit as well. - Flegg:
A “flegg” is an egg replacer made from flax meal and water. Just mix 1 tbsp flax meal with 3-4 tbsp of water instead of an egg. Let sit for five minutes and add it to your baking mixture. Chia is another great alternative. - Silken Tofu:
Just like apple sauce or banana, you can substitute ¼ cup silken tofu for 1 egg, especially if you want to add moisture. Remember to purée the silken tofu before adding it, or you will get chunks in the finished product! - Starch and water:
Any starch as corn starch, potato starch, arrowroot powder, and other alternatives act like a binder in recipes for baked goods as well as for puddings, smoothies, and dressings. For binding purposes only, use two tbsp of starch instead of an egg. Mix well and enjoy 😉 - Lupine or Soy Flour:
Lupine flour or soy flour is simply mixed with water and serves as a great high-protein replacement for eggs in cakes and pastries. - Nut butter:
Nut butter like peanut butter, cashew butter or almond butter can also be used to substitute eggs in most recipes. To replace one egg, use three tbsp (about 60 grams) of nut butter. Keep in mind that it will add a nutty flavor, so it works best in brownies, pancakes, and cookies.
