You absolutely have to try this fancy carrot sauce. OMG – there’s no way your pasta will be boring. The sauce not only pimps the taste but also the nutritional values, because you fill your dish with some extra protein. So it’s an absolute win-win. As you know, I’m a big fan of recipes that boost my protein intake.
All you need for the fancy carrot sauce is silken tofu, onions, carrots and a few spices. You can then mix the fancy carrot sauce with your favorite pasta. It’s really quick and tastes fantastic.
To the recipe

- 2 medium carrots
- 2 cloves garlic
- 1 small onion
- 120 ml vegetable stock
- 200 g silken tofu
- 1 pinch of nutmeg
- 1 tbsp nut butter
- ½ tsp thyme
- 2 tbsp yeast flakes
- 1 tbsp mustard
- Salt and pepper to taste
- Cook the pasta for 1 minute less than the instructions on the packet.
- To make the sauce, finely chop the onion, garlic and carrots. Sauté in a little oil. Add the vegetable stock and cook until done.
- Blend the silken tofu with the other sauce ingredients until creamy. Season to taste with salt and pepper. Pour the sauce into a pan and simmer for 1 minute with the pasta and 1 tbsp of pasta water. Serve hot with herbs and yeast flakes.
Not just for pasta
I think this fancy carrot sauce not only goes well with pasta but also with other things such as vegetable bowls, potatoes or rice. Perfect if you have a stressful week ahead of you. I also like to prepare the sauce in advance and then take it with me to meetings or to the co-working space. That way I’m always prepared and can change what I eat the sauce with every day. It also keeps really well in the fridge. So it’s the perfect dish for anyone who works.
