Hello, dear ones, while we spent the springtime baking banana bread one by one, since the beginning of the autumn season a completely different vegetable is in demand… of course we are talking about pumpkin. As soon as the first yellow and red leaves sail to the ground, I could only live on pumpkin. But of course, pumpkin soup is always too boring, so I have put together my favorite pumpkin recipes on my blog. Let the pumpkin party begin!
GLUTEN-FREE PUMPKIN SPICE DONUTS
How about soft and pillow-like baked pumpkin donuts, dusted with coconut sugar for a sweet breakfast or afternoon snack? Pumpkin Spice Donuts are gluten-free, vegan and oil-free. But they are also perfect for a Sunday brunch with friends. This simple recipe, which is ready to eat in just 30 minutes, gives you a real autumn feeling!
VEGAN PECAN PUMPKIN CAKE
This pecan pumpkin cake with oatmeal base and delicious pudding filling is THE perfect dessert for your festive table! Vegan, gluten-free, paleo and healthy. Click here for the recipe.
PUMPKIN SPICE COOKIE DOUGH
You may know my fondness for dough. Of course the pumpkin spice cookie dough should not be missing. Especially when it has to go fast and it’s not enough for baking. If you have a little more time, you can also stir 1 teaspoon of baking powder into the dough and then fill it into donut forms and bake. The donuts won’t be very fluffy, but very, very tasty. Click here for the recipe!
PUMPKIN SPICE LATTE
If you follow me on Instagram, you might have noticed that I am a huge latte fan. My favorite is the Pumpkin Spice Latte. I made this recipe with three more latte recipes for you. You can find them all on Youtube.
LOW-FAT PUMPKIN CRUMBLE CAKE
Pumpkin is THE perfect vegetable for more nutritional value in our sweet treats. It is creamy, beautifully orange, naturally sweet, easy to prepare and regional. That’s one of the reasons why you can find a lot of pumpkin recipes on my blog. I made this crumble cake with Kirsten, she loves baking at least as much as I do, maybe a little more :).
PUMPKIN SPICE MUFFINS
After the sixth attempt it finally worked out. The pumpkin spice muffins were not too mushy, not too sweet, not too dry and not too greasy :). Sometimes healthy cooking is not that easy. Especially when it comes to gluten-free and oil-free baking. But here comes the ingenious recipe.
FILLED BUTTERNUT PUMPKIN FROM THE OVEN
It does not always have to be sweet! This hearty pumpkin creation comes out of my oven quite often in autumn. Happy baking!
Let’s celebrate the pumpkin season together! Have you already tested one of my favorite pumpkin recipes? Let me know or share your autumnal baking and cooking results with me on Instagram.
