Small pizzas with kimchi – healthy, simple, and delicious
These delicious mini-kimchi-pizzas are perfect as a snack or appetizer. You can make them vegan or vegetarian. The recipe is super easy and quick. Who would have thought that kimchi would taste so good on pizza? So here we don’t have a Korean-Oriental fusion, as with my special kimchi falafels, but an Italian-Korean fusion. I’m sure there will be something new with kimchi soon, which I’ll share here on my blog next. You’ve probably already noticed how much I love eating this superfood. 😀
Why kimchi?
Kimchi consists of vegetables such as Chinese cabbage, carrots, chili peppers, cucumbers, radishes, and leeks. In principle, almost any vegetable can be fermented. This is precisely what makes kimchi so valuable: fermentation produces probiotic bacteria that support healthy gut flora. Since 70-80% of our immune system is located in the gut, it is worth taking care of it. Probiotic foods such as kimchi can help with this.
In addition to lactic acid bacteria, kimchi provides fiber, vitamins A and C, various B vitamins, and antioxidants. This makes it a real superfood, and I just love the taste.
If you want to take full advantage of the probiotic benefits, you can add the kimchi to the mini pizzas after baking. This preserves the good bacteria.
What are the benefits of teff flour?
I love using teff flour because it’s a gluten-free superfood. It’s rich in protein, fiber, iron, calcium, magnesium, zinc, vitamin B6, and other minerals. This means it supports both energy supply and digestion.
Teff flour also has a low glycemic index. This means that your blood sugar level rises more slowly after eating and remains more stable. If your blood sugar level fluctuates greatly, it puts strain on the body. With teff flour, you avoid sharp spikes in blood sugar, which would lead to high insulin secretion.
Have you ever used a blood glucose meter? I find it fascinating how different foods affect blood sugar levels in different ways. For example, I would never have thought that white rice, as found in sushi, would cause blood sugar levels to rise so sharply.
The health benefits of kimchi and teff flour alone make these healthy mini pizzas worth trying. 🙂

Mini-Kimchi-Pizza
Ingredients
- 150 g teff flour
- 1 tsp baking powder
- ½ tsp salt
- 1 tbsp olive oil
- 120 ml water
- ca. 100 g cream cheese (vegan or classic)
- ca. 100 g kimchi roughly chopped
- 1 tbsp sesame seeds (black)
- optional fresh herbs (e.g. coriander or mint, chives)
Instructions
- Preheat the oven to 200 °C (top/bottom heat).
- Mix the teff flour, baking powder, and salt in a bowl. Add the oil and water and knead into a smooth dough. It should be malleable but not sticky.
- Place on a baking sheet and pre-bake for 10-12 minutes until slightly firm.
- Remove from the oven and spread with cream cheese. Then top with kimchi and sesame seeds. Drizzle with oil again if desired.
- Bake for another 8-10 minutes until the bottoms are crispy.
- Garnish with fresh herbs and enjoy hot.
