Crispy healthy pea zucchini fritters with a herb yogurt dip
In this blog post, I present a delicious vegan recipe for crispy pea zucchini fritters with a refreshing herb yogurt dip. These fritters are a great way to incorporate fresh vegetables and herbs into your meals.
These vegetable fritters require very little prep time to prepare. Plus, they are ready to fry in just 15 minutes in the Airfryer. Don’t worry if you don’t own an Airfryer. Because they can also be prepared in the oven.
Health benefits
Now let’s move on to the health benefits of the ingredients.
Zucchini
This vegetable contains few carbohydrates and is low in calories due to its high water content. When you eat zucchini, your blood sugar level remains very stable and ensures a long-lasting satiety.
Furthermore, zucchini has, among other things, vitamin C. This vitamin is important for our immune system and numerous metabolic processes. In addition, the vegetable contains the mineral iron. We also need this trace element for many processes in our body. Among other things, it is involved in oxygen transport as a component of the red blood pigment hemoglobin. Likewise, we need it to store oxygen in our muscles.
Coriander
Coriander is one of nature’s oldest medicinal herbs. It is said to help with gastrointestinal complaints, antibiotic-resistant infections, and chronic inflammatory diseases. It also promotes the elimination of toxins to which we are inevitably exposed in the air, drinking water, and food.
Cumin
This ancient Indian spice has impressive healing powers and is often used for digestive ailments. Just chewing a few cumin seeds can help with gas, abdominal cramps, or bloating. It can also prevent digestive problems with hard-to-digest foods like legumes.
Whole wheat flour / Buckwheat flour
For the peas and zucchini to hold together well, you’ll need flour. We recommend whole wheat flour because it has more nutrients and is less processed. Since it provides fiber, B vitamins, and minerals that help stabilize blood sugar levels and overall health. Vegetable yogurt
It is a good source of probiotics. Thus, it supports gut health.
I prefer to use Alpro Skyr without sugar or the quark alternative from Sojade. You can also serve the fritters with hummus or vegan cream cheese.

Step-by-step instructions
1. Grate & squeeze zucchini
- First, grate 150 g zucchini and squeeze out the liquid.
- Then salt the squeezed zucchini.
2. Prepare pea zucchini dough
- Next, you need to mash 240 g of peas with a fork.
- Now add all the remaining ingredients to the peas. (1 tsp coriander, 1/2 tsp cumin, 1 tsp salt, 1/2 tsp pepper, and 30 g whole wheat flour/buckwheat flour).
3. Shape & bake fritters.
- Next, shape 6 fritters from the pea zucchini dough.
- Bake these in the air fryer for about 15 minutes. It is best to preheat him to 180 °C. (Prepared in the oven, they take a little longer).
Optional: you can spray the fritters with oil. This will make them crispier.
4. Herb-yogurt dip
- Meanwhile, prepare the herb yogurt dip by mixing herbs of your choice (e.g. parsley, chives, or dill) with vegetable yogurt or a cottage cheese alternative.
- Finally, stir everything.
Once the Pea Zucchini Fritters are done, serve them with your yogurt dip or favorite spread.

- 150 g zucchini (1 zucchini)
- 240 g peas
- 1 tsp coriander or 1 tsp coriander powder
- ½ tsp cumin
- 1 tsp salt
- ½ tsp pepper
- 30 g wholemeal flour/buckwheat flour
- First, grate the zucchini and squeeze out the excess liquid.
- Then salt the grated zucchini a little to remove the moisture.
- Mash the peas and add them to the bowl with the zucchini.
- Add the cilantro (or coriander powder), cumin, salt, and pepper. Mix all the ingredients well.
- Now add the whole wheat flour or buckwheat flour and stir it in thoroughly until you get a uniform mixture.
- Then form about 6 fritters from the mixture and place them on a baking tray lined with baking paper or in the AirFryer basket.
- Finally, bake the fritters in the Air Fryer at 180 °C for about 15 minutes or until golden brown and crispy. It takes a little longer in the oven.
- You can optionally spray them with oil spray for extra crispiness.
- Once the fritters are done, serve them along with the herbed yogurt dip.
