The 3 Overnight veggie Oats are perfect for on the go. You can prepare them all in under 5 minutes in the evening and take them to school, work or anywhere else in the morning. And as we know, if our first meal is a healthy one, it’s much easier to keep this level the whole day and have an awesome day!
Overnight oats are great when you’re a little late in the morning and don’t have time to make a good breakfast. Prepared in the evening, it saves you a lot of time in the morning. Oatmeal gives you a good foundation and enough energy for a successful day. My personal tip is to upgrade your diet with a portion of vegetables anytime you can. So don’t forget to eat them at breakfast as well. Mixing veggies into your overnight oats, will not only give you a good source of vitamins but also upgrade them to a level of creaminess you always dreamed of.
You won’t taste the veggies, I promise!
I have put together three super delicious recipes to convince you that veggies will be a plus to your overnight oats. The best thing is that you won’t taste the difference at all. Both, zucchini and cauliflower are vegetables with only a slight taste of their own. If you always go for sweet not savory in the morning, you won’t have to do change your breakfast habits. With veggie infused overnight oats you can still start the day sweet and healthy.
Three delicious recipes for veggie infused overnight oats:

- ½ zucchini
- 50 g oat flakes
- 1 handful of raspberries, fresh or frozen
- 2 tbsp brown millet, puffed
- 1 tsp linseeds, kibbled
- 1 pinch of ground tonka bean
- 120 ml coconut almond milk
- Grate the zucchini.
- Layer the oat flakes, zucchini and the remaining dry ingredients in a glass.
- Add the coconut almond milk and stir.
- Put the mixture in the fridge for at least one hour or overnight.

- 1 small carrot
- 3 tbsp apple banana puree or ½ apple, grated
- 50 g oat flakes
- 1 tbsp peanut flour
- ½ tsp cinnamon
- 120 ml oat milk
- Grate the carrot and the apple.
- Mix oat flakes, peanut flour, cinnamon together.
- Add the grated ingredients. If it has to be really fast, you can also replace the freshly grated apple with apple banana puree.
- Add the oat milk and stir.
- Put the mixture in the fridge for at least an hour or overnight.

- 50 g oat flakes
- 80 g cauliflower rice, frozen or cauliflower, fresh
- 1 handful blueberries, frozen
- 1 tbsp poppy seed
- ½ organic lemon zest
- 2 tbsp yoghurt
- 120 ml coconut rice milk
- Put the cauliflower, either fresh or deep-frozen, into the blender and shred into small cauliflower rice. If it has to go really fast, you can also simply use ready-made cauliflower rice (frozen).
- Mix oat flakes, cauliflower rice and blueberries with the yoghurt.
- Add the poppy seeds and the zest of half an organic lemon.
- Add the coconut-rice-milk and stir.
- Put the mixture into the fridge for at least an hour or overnight.
